Blackened Redfish Fillets

So i caught some reds yestarday and cooked em up tonight. For this recipe you can either bake them like i did or grill em both works. What you will need is
Land & Sea Blacking (What i prefer any blacking will work though)
Couple rings of green onions
Aluminum foil
Pam Spray

Preheat oven to 375 Then put skin side down on the sprayed aluminum foil. Coat the fillets with blacking then put a couple rings of onions on the top. Bake for 25-30 minutes. Heres the before and after pictures.

Looks great Slammer.  !@!  If it was my piece I'd slap it between a hoagie roll with plenty of onion, tomato, shredded lettuce & mayo...hey, but that's just me  8)

Looks good, I usually don't cook my fish with skin though :)

Yeah, same here. Unless it's mango snapper or pan fish (which I gut & scale then roast whole...head still on and all) I cook just the meat. Still, Slammer's got a good, simple recipe going there.
